The local cuisine

The Alpine and Mediterranean diversity manifested in South Tyrol's cuisine leaves little to be desired. Traditional Alpine fare such as Knödel (dumplings) and Kaiserschmarren appear on menus alongside Italian classics like pizza and pasta.

Alpine tradition and Mediterranean lifestyle meet in South Tyrol and nowhere is this more strongly reflected than in menu lists in restaurants, rural inns and pizzerias.

Tradition and local products

South Tyrolean classics such as Speckknödel (bread and speck dumplings), Schlutzkrapfen (ravioli filled with spinach and curds) are just as common in the region's eateries as authentic risottos, pasta and fish dishes.

South Tyrol's cuisine is strongly characterised by locally grown or produced ingredients, many of which look back on a long tradition in rural cookery.
